I’m on holiday and it feels SO GOOD.

My exams went fairly well, especially considering how bad my senioritis was. 10 seconds of studying:15 minutes of internetting is probably not the best ratio…

I have all next week off and then I start my summer clinical placement on the 27th.

Scott and I thought we might be moving to the penthouse this weekend but apparently we’re not getting the keys until next Wednesday. I’m not sure why…. Scott said maybe the landlords want to have a patio party for themselves before they let us move in. Haha. Possible, I guess?

Anyway so we’re hoping to move in on Thursday. I CAN’T WAIT. I guess it’s kind of good to have a bit of extra time to pack because we haven’t started at all.

I don’t have any pictures to share or anything because life was pretty boring up until yesterday. So much school. But so far on my time off I have made another batch of Nutella popsicles, and I’m slow cooking some ribs that we’ll have with apple coleslaw for dinner tonight. And after 14 months, I’m getting my hair cut next week! Plus of course I’ll take some pictures of our new apartment as soon as I can.

I have a new recipe for you and it is REALLY SUPER SIMPLE. And REALLY SUPER TASTY.

Handy homemade popsicle tip: fill your popsicle tray up with water and then pour it into a measuring cup so you know exactly what volume of popsicle mixture to make up. Then write the number on the side so you don’t forget in the future!!

Mine is a cheapy popsicle mold from Superstore and it works just fine. I think it cost $2. And it holds a teeny bit over 2 cups of liquid.

Nutella fudgsicles

  • Mix 2 cups of chocolate milk and a few nice big tablespoons of Nutella in a big measuring cup/bowl/whatever. Whisk until the Nutella dissolves (I swear it will!). Pour into popsicle mold and freeze!

I made them last night and had my first one today after the gym. IT WAS AWESOME.

I find it pretty funny that our very responsible dinner of waffles is now front and centre on this blog post. I can’t get away with anything when I’m posting my dinners every day for an entire year, haha! There were some nice healthy recipes towards the end of the fortnight though.

Favourite recipe #9: artichoke and asparagus quinoa with feta and chickpeas

PS I’ve also included a bonus recipe link for zucchini brownies about half way through this post.

april 21st, 2013 – belgian waffle with strawberries and frozen yogurt

Pfft. Who needs dinner. We ate waffles for dinner because we are ADULTS. Not.

april 22nd, 2013 – fish salad with a tortilla on the side

This was supposed to be in a burrito, but the tortillas were all mangled and ripped so we had to eat the components separately. It was a bit of a sad dinner, but the panko breaded fish was nice! (I had another piece of fish underneath the cheese, btw).

april 23rd, 2013 – peri peri chicken with sweet potato fries, peas and corn

More pictures after the jump…

What I have spent this week doing:

  • dreaming about our new apartment (we signed the lease on Monday night!)
  • playing with my new phone (I <3 it)
  • watching The Voice (WHYYYYYYY????)
  • watching hockey (GO SENS GO)

What I really should be doing:

  • studying for midterms (“mid”terms)
  • studying for finals (barf)
  • finishing homework (barf)
  • chores at home (ugh)

I’m going to have to hide my computer/phone this weekend and next week though because if I don’t my grades are seriously going to plummet. It’s been extra hard to pay attention at school all day because instead of labs we now just have extra hours of lectures and that is really tedious. 4+ hours of one subject in a day is too much.

Just gotta make it through classes next week and exams the week after that!!
